The Hanger Steak is a very limited cut yielding only one per animal. It “hangs” from the last rib just below the Tenderloin. It is a flavorful, tender, and well-marbled (juicy) cut that is best cooked quickly at a higher temperature roasting, broiling, or grilling. Prepare with your favorite marinade or simple seasonings.
